COOL DOWN FROM THE INSIDE OUT with these fresh fruit boozy popsicles

As temperatures exceed 90 degrees, we find ourselves frantically reaching for our handheld fans, personal cooling systems and sweat friendly clothing. Due to the global pandemic, having kept our public pools closed, suburbs all over the country are outfitting their backyards with temporary baby pools and misting systems just to stay cool. Our air conditioning units are approaching maximum cooling so what better way to stay chill than from the inside out? Frozè, and popsicles are here to stay – in an adult way. Check out these summer boozy fresh fruit popsicles which can also be made virgin by simply leaving out the adult beverage portion of the recipe.

kiwi + orange + honey +vodka

cherry + thyme +lime + vodka

pineapple + habanero + rum

blueberry + lemon + vodka

watermelon + mint + vodka

peach + ginger + bourbon

cantaloupe + ginger + cardamon + vodka

All pops are made with natural fruit and their juices therefore they separate easily. Once blended they must be strained before adding to final freezing containers. I recommend freezing partially, standing up (I used a tall water glass) for an hour initially. Once slushy, mash them up with your fingers to incorporate juices back into the mix and redistribute any settling. Then freeze, laying down overnight. If you’re making them virgin, simply omit the alcohol and add a little more water.

kiwi + orange + honey + vodka icy popsicles

Ingredients

Scale
  • 3 kiwi fruit, peeled and chopped
  • 1 orange, juiced
  • 1/2 orange zest (optional)
  • 2 T honey
  • 6 T simple syrup
  • 1 C water
  • 1/4 C vodka

Instructions

  1. Add all ingredients to blender and blend until smooth about 1 – 2 minutes.
  2. Strain through a fine mesh strainer and save 2 T of kiwi seeds to add back into mixture. Discard any pulp and rest of seeds.
  3. Using a small funnel add liquid to silicone molds or to these sleeves and freeze partially standing up for 1 hour (I used tall water glasses). Once slushy, break them up slightly and then lay flat in the freezer to finish freezing overnight.
